All the gooey, chocolatey goodness of s’mores — no campfire required!

These Vegan S’mores Cereal Bars combine crunchy graham cereal, melty marshmallows, and plenty of chocolate chunks for an easy no-bake treat that tastes like one of my favorite childhood desserts.

I love a good s’mores-inspired anything. There’s just something about that combination of graham, marshmallow, and chocolate that instantly feels nostalgic. I know s’mores began as a campfire classic, but truthfully, I love the idea of those classic s’mores with the giant toasted marshmallow more than the actual thing.

I prefer these cereal bars way more! Why? For one, I’m not a huge fan of charred marshmallows, but I love marshmallows as is. I’m also not a huge chocolate person — especially when it comes to Hershey’s milk chocolate — so the chocolate in traditional s’mores can be a little overwhelming for me.

With that said, I love s’mores cookies, coffee, ice cream — you name it! But for me, nothing nails what I’m looking for in a s’mores treat quite like these cereal bars do. Plus, as a vegan, it’s not always easy to find dairy-free and gelatin-free s’mores products, so these fill a major void in my life — and they’re super easy to make!

An Easy Vegan S’mores Treat

Instead of using graham crackers, I use vegan graham cereal, which gives every bite that familiar graham flavor while keeping the bars crunchy and easy to eat.

Dandies marshmallows create that wonderfully sticky, chewy base, while Enjoy Life chocolate chunks bring in plenty of rich chocolate goodness.

The trick is saving some of the marshmallows and chocolate for the end. Rather than melting everything together, I fold some into the cereal mixture so you get little pockets of marshmallow and visible chunks of chocolate throughout the bars.

The result? A treat that actually looks like s’mores, too.

Tips for the Best S’mores Cereal Bars

Keep the heat low. Vegan marshmallows can become thick and sticky when they’re overheated. Melt them slowly with the vegan butter and remove them from the heat once they’re smooth.

Give the mixture a minute before adding the chocolate. If you add the chocolate chunks immediately, they may completely melt into the marshmallow mixture. Waiting a minute or two helps keep some of those delicious chocolate pockets intact.

Don’t pack the bars too tightly. Gently press the mixture into the pan instead of compacting it. Pressing too firmly can turn a soft, chewy cereal bar into a very dense one.

Save some goodies for the top. A few chocolate chunks and marshmallows pressed into the surface make these bars look every bit as good as they taste.

Notes

  • For soft and chewy cereal bars, keep the heat low when melting the vegan marshmallows and avoid pressing the mixture too firmly into the pan.
  • Allowing the cereal mixture to cool briefly before adding the chocolate helps prevent the chunks from completely melting.
  • Store the bars in an airtight container at room temperature. For the best texture, enjoy within 2–3 days.

No Campfire Necessary

These Vegan S’mores Cereal Bars are perfect when you’re craving the flavors of summer but want something ridiculously easy. They’re great for parties, movie nights, lunchbox treats, or just because you happen to have a bag of marshmallows calling your name.

And unlike traditional s’mores, you don’t have to worry about your marshmallow falling off the stick and directly into the fire or burning your mouth on them because you were too impatient to let the marshmallow cool down. Been there. 😂
